Joey is a life long resident of St Charles Parish and has been interested in cooking since his early years. He is now well known for using traditional Cajun methods in his approach to food. Joey believes that the Cajun culture is disappearing and he seeks to preserve his heritage in part by teaching these traditional methods to young people growing up in the area. As he sees it, "You never know where the next great chef from Louisiana is lurking." He has cooked at events such as the Cajun French Music Association and competed in various Jambalaya and Gumbo cook-off competitions.

Joey also embraces all local cooking traditions. In fact, he just recently won First Place at the German Coast Farmers Market (located in Destrehan, LA) with his own version of Atomic Pepper Jelly.
