Regina is best known for her San Francisco restaurant, Regina's at the Regis, located in the heart of the city's theater district where she served award-winning contemporary southern cuisine. From 1985 to 1987, Regina's was a favorite late night spot for theater-goers as well as directors, musicians and actors such as Tim Curry, Shirley Maclain, Danny Glover, Patti LaBelle, Lily Tomlin and many more.

In 1995 Regina created and opened the first Biscuits & Blues nightclub in San Francisco, which was awarded a WC Handy award in 1999 as the Best Blues Club in America.

In 1998, Regina moved with her family to Minneapolis and joined the Nicollet Island Inn on the Mississippi River. Regina developed the Inn's concept of a heartland cuisine with an emphasis on seasonal ingredients. Her menu centered around the best regional ingredients of Minnesota's distinct four seasons.

Regina spent most of 1999 in New York where she completed her cookbook, "A Collection of Seasonal Menus & Recipes from Regina's Kitchen" released in September, 2000.(now sold out)

In mid 2000 Regina came full-circle to her hometown and to be a part of the prestigious Monmouth Plantation. Regina now owns her own Bed & Breakfast, Twin Oaks. She is a consultant to Historic Stanton Hall and Longwood where she oversees destination weddings and special events at these incredible Historic Homes.

Now I'm pleased to return to Natchez and add a touch of my travels and experiences to the contemporary southern dishes I create for my Cooking Classes here at Historic Twin Oaks.
