Zatarain's was started in Louisiana by a man named Emile A. Zatarain, Sr. and it obtained its first product trademark in 1889. Although he started selling root beer, he quickly expanded into other foodstuffs, including mustards, pickled vegetables, and extracts. The company continued to grow and added many staple Creole products to their line. In 1963 Zatarain family sold their company, and it was moved to just outside New Orleans, LA in Gretna. McCormick & Company acquired Zatarain's in 2003, and they continue the same culinary traditions as the original company.

Zatarain's sells spice blends, crab and shrimp boils, Creole Mustard, and ready to make meals. The company continues to market Creole staples in terms of spice combinations, essential ingredients, and New Orleans style dishes.
